Postpartum Chia Seed "Crunchy Fat Crispies"
This recipe provides a one-handed, lactation-friendly snack that is easy to digest and packed with healthy fats.
Ingredients:
1 cup creamy peanut butter (or other nut butter)
Β½ cup butter (salted, organic, grass-fed is often recommended)
Β½ cup honey (or a little less to taste)
3 cups organic brown puffed rice cereal (slightly more than the original book version to balance the texture)
1 tbsp chia seeds
Pinch of sea salt
Optional topping: 1 cup dark chocolate chips (melted for drizzling or a full layer)
Instructions:
Melt the peanut butter, butter, and honey in a small saucepan over medium heat, stirring until the mixture is well combined.
Stir in the chia seeds and mix well.
Combine the puffed rice cereal and the pinch of sea salt in a large mixing bowl.
Pour the warm peanut butter mixture over the puffed rice and stir until all the cereal is evenly coated.
Transfer the mixture to an 8-inch or 9-inch square pan lined with parchment paper. Press down gently to form an even layer.
Add optional chocolate topping (if using): In the same saucepan (no need to rinse), melt the chocolate chips over low heat, stirring constantly. Once melted, spread the chocolate over the top of the crispies mixture.
Chill in the fridge for at least 20 minutes (or until hard to the touch). Once firm, cut into squares and enjoy.
Store these crispies in an airtight container in the fridge or freezer for easy access.
